Dear Monday, please come slow and go quick!!
I spent my whole weekend with my brother, his gf and my beautiful neice! Then to top it off, amazing church! My weekends have been so good=)
I have been eating sandwich thins a lot more lately, so I thought I would compare to see if there is really a difference between regular bread slices and the thin slices…

Arnold Bread slices: 100% Whole Wheat

     Per Serving size: 1 slice
         Calories 100, from fat 20
         fat 2g
         carbs 20g
         Fiber 6g
         sugar 3g
         Protein 4g

Arnold Sandwich Thins: 100% Whole Wheat

      Per Serving: 1 roll
         Calories 100 , from fat 10
         fat 1g
         carbs 21g

         fiber 5g
         sugar 2g
         protein 5g

Once comparing the two side by side there is not a huge difference between the two. I was surprised to find the thins had more carbohydrates than the slices, not by a lot. I do like the thins more than the slices though, I am not a fan of thick bread on sandwiches.

I am sore today from my yoga yesterday, sounds weird but i feel stretched out sore all over my body! and…I LOVE it!

My little brother is on his way home today! He was at boot camp and is coming home an a medical leave for 30 days. According to him they do not feed good food there, so he has requested M&M cookies and tomorrow I am making breakfast and lunch for him.

M&M Cookies

  • 1 cup shortening
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 1/4 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups candy-coated milk chocolate pieces
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Blend together shortening and sugars. Beat in vanilla and eggs. Sift dry ingredients together and add to mixture. Stir in candies.

    best part of cookies!

  3. Drop by teaspoon onto a ungreased cookie sheet.

  4. Bake 10-12 min

    YUM!!

    After all the baking and cleaning up, I needed to trim up the flowers I bought, on sale at Walmart=)

    so pretty! fresh flowers are the best!

Today has been an “out of it” day. Ya know, just going through the motions but your mind in somewhere else, not sure where mine was…=). I love my short work days; I went to the library and picked up some new workout DVD s and worked out all before the husband got home!

I started my dinner challenge tonight….the result are:

Garlic and Lemon pan-fried Chicken, Green beans, Potatoes

Ingredients:
2 tablespoons olive oil
2 big cloves garlic, peeled and slightly smashed
1/3 cup breadcrumbs
2 tablespoons Parmesan cheese
1/2 teaspoon chopped rosemary
zest and juice from half a lemon
1 egg
2 chicken breast halves, pounded to 1/3 – 1/2 inch thickness

Directions:
Heat a medium skillet over medium-low heat and add oil. When oil is hot, add garlic and cook, stirring occasionally, for about 7 minutes, until golden brown and softened. Remove the garlic with a slotted spoon and place in a small bowl. Smash with a fork and set aside.

Combine the breadcrumbs, Parmesan, rosemary and lemon zest in a shallow dish. Add salt and pepper to taste. Add the egg and lemon juice to the smashed garlic and whisk to combine.

Heat the garlic oil over medium heat. Season the chicken with salt and pepper. Dip the chicken into the egg mixture, then the breadcrumb mixture. Once the oil is hot, add the chicken and cook about 2 1/2 minutes per side. Serve with slices or wedges of lemon, if desired.

Serves 2

The potatoes were cute up in squares then laid in foil (foil shaped like a boat). I pour a little olive oil and coated the potatoes and then sprinkled salt and pepper. Baked on a cookie sheet in the oven at 350 for about 30 or so min; until the potatoes are soft.
Green beans were just steamed with a little butter, salt and pepper.

This tasted great!! Next time I need to pound the chicken out to make it thinner, this would stop the crumb coating from getting almost burnt like.

 

Prayer=Power February 7, 2011

Happy Monday!
I had the most amazing end of a weekend. Let’s start with prayer weekend was great! Saturday there was a little boy who had choked on a marker, the doctor’s reports were he may not make it out of surgery and if he does he will have brain damage. Well, everyone began praying, people from all over. He came out of surgery, and by Sunday night he was trying to talk, get up, wanted to go home, he knew everyone! Prayer = Power It was awesome and amazing! I definitely got my blessing this weekend and am excited for this week and next Sunday.

I am still praying daily about nutrition, exercising, etc this weekend God really delivered me from something that was taking over my life. So I will now just be writing what I eat no more calories, counting and tracking. While I praying for this stress to be gone, the Daniel’s fast kept coming to mind. So today and this week I will be studying more about this and figuring out how to apply this to my daily life

Today has been a very off day for me…woke up unusually early and then can’t seem to get my head on straight at work-little mistakes on things I know like the back of my hand…what can I say TGIF!
I am very excited for this weekend! It was supposed to prayer week at church but with the snow it was cancelled so tonight is our first night! We have special prayer tonight and then youth prayer, I love our youth group! It will definitely be a late night but will be worth it!
My wonderful husband is cooking dinner because I close tonight and have to be at church almost right after I make it home, it’s my favorite–grilled cheese=) I would rather have the simplest meals than extravagent ones.
     What is your favorite classic meal?
